Our Story



Desirae Bobov is the founder and CEO of Sprigy, the Northwest’s first salad restaurant. From track coach to professional poker player to preschool teacher, Desirae tried her hand at several jobs before settling on the restaurant business as her final career choice. She saw the salad industry start in NYC while traveling and then saw the concept explode in Washington DC (where she was living at the time). When she finally decided to move back to her home town of Seattle, there were no salad shops here yet so she knew what she needed to do.

Starting in the farmers markets in June of 2011, Desirae’s salads launched the fast-casual salad industry in Seattle. Desirae’s creativity with local ingredients and her determination to make salads healthy, filling, and delicious have earned her salad restaurant a place on the local, and soon-to-be, national culinary map. In October 2012, Desirae left the confines of the farmers markets to start her own restaurant, Seattle Salads, winning fans immediately with her unique salad creations and superior customer service.  

In 2017, Seattle Salads went through a rebrand and is now called Sprigy. With the view of national salad domination, she realized the name Seattle Salads was going to be too limiting, so the company went through a rebrand when opening up the second location. Our salad dressing line will continue to be known as Seattle Salads to give ode to our original name that people learned to love. Our second location has opened in April of 2017 in the flourishing First Hill neighborhood connected to Swedish hospital. Desirae envisions Sprigys on every corner in the future. Everyone needs and deserves healthy convenient options to choose from no matter where they live.

Seattle Salads Delivery Service continues to grow as Desirae’s fans can be found in companies like Starbucks, Nordstrom, Amazon and Microsoft.

Seattle Salads Catering & Events offers Desirae’s catering clients the same outstanding experiences they have come to expect in her memorable restaurant.

Seattle Salads’ product line began in 2015 with the introduction of six different salad dressing flavors—the ‘secret sauce’ of her success. The product line has since grown to include popcorn. Other products are in works.

Desirae’s love of healthy delicious food has continued to evolve beyond the restaurant scene. Desirae has been a featured guest on talk-radio shows KIRO AM and KING 5, and popular with the media. Desirae is passionate about making kids healthier, globally. She was a coach and supporter of Girls on the Run. She has worked with abused children and kids with Bipolar Disorder. Desirae also supports Seattle Tilth, a nonprofit organic gardening and urban ecology organization. Desirae graduated with a Bachelor of Arts in Psychology from the University of Washington. Desirae competed in the World Series of Poker two years in a row. When she’s not working, you might find her rock climbing, hanging with her newest edition Baby Ivan (born 8/15/2015), launching a nonprofit, or hopping another plane with her husband Vlad and baby Ivan to see more of the world.

Desirae Bobov was traveling when she became convinced that the world was ready for a salad experience that was healthy, filling and delicious. In October of 2012, Desirae opened the very first Seattle Salads.

Through the years we have grown, but the mission has stayed the same – to make food culture healthier, fun and delicious.

Never having attended a culinary school, Desirae’s cooking acumen comes mostly from her global travels, which includes almost every state in America, 8 European countries, Australia, and beyond. Her extensive background in health research and customer service lends enormous strength to her brand.
